Taiwan Recipe: Bubble Tea

After only 1 day in Taipei, Taiwan – I scraped my coffee addiction and have adopted Bubble Tea.

Since Bubble Tea is my new addiction – I’ll be needing to take it everywhere with me. And although Taiwan has bubble tea shops on every corner – upon leaving – I’ll need my fix. So lets have a recipe!

The drink originally started as a childhood treat in Taiwan in the late 1980’s at small tea stands in front of the schoolhouses but then spread across the country with Starbuck-World-Domination-Like vigor.

Bubble Tea Recipe:

Yields: 1 (16 ounce) drink
Prep Time: 5 Minutes
Cook Time: 30 minutes
 

Ingredients:

  • 1/2 cup chilled, cooked large tapioca pearls
  • 1 cup crushed ice 
  • 1 cup very strong chilled black tea (or orange pekoe tea or lichee tea)
  • 1 cup milk or to taste 
  • Honey or granulated sugar to taste

Preparation:

Place the pearls in a large glass. Combine all remaining ingredients in a cocktail shaker, and shake vigorously until the mixture is frothy. Pour into glass, and serve with extra thick straw.

 

How to Cook Tapioca Pearls:

Ingredients:

  • 6 to 8 cups of water
  • 1 cup tapioca pearls

Preparation:

In a large pot, bring water to a boil. Slowly stir in tapioca pearls so they do not stick together. After 1 minute the tapioca pearls should float. Reduce heat to medium and let boil, covered, for 12 minutes. Turn off the heat and let the tapioca pearls sit, covered, for an additional 12 minutes. After, rinse tapioca pearls in cold water, and drain.
